A1C  5.7 (last reading was 7.1 or so)
Cholesterol 179
       HDL 40

Here's an example:
Starting at 95, I can eat a normal size apple - about 20 grams of carbs,
mostly sugar - and be at 130 at 1 hr, back to 95 in 2. Would this spike be
considered bad or hard on my body?

Ok, I am embarking on understanding fats.  Can someone please explain in
short terms the benefits and pitfalls of fats?  Trans fats, unsaturated
fats, polyunsaturated fats, monounsaturated fats, etc.  Maybe rank them from
good to bad to get me started.

Good news is - I've got two kidneys.  Bad news is - I'm going to lose

If so, why?
How can you possibly know which foods spike you and which do not?
