I made Roasted Pepper Pasta Sauce today along with some roasted garlic pesto. Served all three on low-carb (Dreamfield) linguini. It made a good looking dinner and the taste was excellent.

I eat my nightly snack around 8:30 pm and do my fasting test between 4-5 am. That is around 8 hours. But if I ate at 8:30 pm and in the middle of the night felt totally famished and ate another snack, then my morning test is no longer a fasting one right? I still test, and then ...

I see pearl barley has a glycemic index of around 25, about half that of many other 'bulk' carbohydrates. Does anyone use it other than in soups, for example as an alternative to rice in curries, or in place of pasta or potatoes (those of you who can eat such things, that is!)?
