I caught a brief news blip that was mentioning that dairy products were needed to help glucose be used to feed tissue in the body. I didn't hear if it was the lactose or the calcium that was responsible, only that you could get the same results from all milk

The carb content and GI of different foods acts differently for many of us. Mushy Peas have 12.1 gm of carb per 100 gm, but my bg leaps into the sky if I eat them. Chips and some cheap sausages but other ppls bg up, but no effect whatever on mine.
