I am trying to record the volume and color of my urine.

To ensure a good fluid intake I drink a couple of pints of orange
squash (mixed with water) throughout the day.

Would the coloring in the orange squash alter the color of my urine?

I think the answer is yes.  The reason I say so is that the instructions for
one of my recent diagnostic tests said to only drink clear fluids.  That was
defined as something that you can see through when poured in a clear glass.
No orange juice.  No colored fruit drinks.  My guess is that some things can
affect the color of the urine, but that is just a guess from an accountant,
so it is probably worth every penny you paid for it.

By the way, I have been told by doctors that it is true that a child's skin
color can turn orange if they eat too many carrots.  For that to happen they
have to eat an extraordinary quantity of that vegetable, but apparently it
is true because when I heard it I asked a pediatrician because I thought it
was BS.  Since then more than one doctor or pediatric nurse has told me that
it is true.

But the carotenes are fat-soluble and not water-soluble, so are
unlikely to appear in urine.

The color of oranges is also mainly due to carotenes. So unlikely that
this would affect the color of urine... BUT, things are usually more
complicated than one would think. To be sure, determine it yourself by
doing a couple of tests.
