The structure of your question makes it not quite clear what information
you want.  Many of the research tests done used sources of it from the
mars company and the same form can be found in their "dove" products.
It is similar toother products or pure cocoa which has not been
processed using the "dutch" method.  Usually that name is on the product
label of cocoa for example or not.  

The mars product of above is not so treated.  That treatment removes
some of the nutritional goodies which have the beneficial health results
shown in the testing.  The process makes products which require less
sweetners as they are less bitter, but the bitter is the good stuff.

Most "dark" forms, but not always, do not use this process.  The degree
of "dark" is stated in terms of percent of cocoa in the product, 60 to
80 percent are common.  The remainder is cocoa butter and in some added
sugar or other sweetners.  Pure cocoa can be used to add to foods.

So I have simply to choose the 60 to 80 percent cocoa -the -bitter- the-
better
chocolate ( not treated the dutch way). I am surprised they don´t marketing
this kind of chocolate for the healthconscious. Now the chocolate is there
for
the gourmet type of customer.

just search for "organic cacao" on Ebay if you want the purest and
healthiest form of chocolate.. it's quite bitter but you get used to the
taste and if you mix it with things like goji berries to add a little
sweetness them yum yum :)
