Hello all,
We make vegetarian pita pizza at home and use part-skim mozzarella
cheese. Still though, I keep wondering how the thickened
cheese (after melting) could be good for you?

Are there any studies or thoughts on whether part-skim
mozzarella cheese (melted) is indeed good for you?

Good for you depends on whether you could benefit from the nutrients
supplied, which sort of depends on what else you are eating

Perhaps the real question is whether this stuff has any toxic stuff in
it. Perhaps this depends on how hot/long you heat it. If there is no
browning, I guess it would be fine, but it is just a guess. You would
need to seek some scientific testring of what you are eating.
I would eat it with releish  :)
