Caramel Crunch Popcorn

Recipe for Friday, 12/22/2006

In this recipe, a little caramel flavor goes a long way. Although the
serving size is small, there's plenty of satisfying sweet taste and
crunchy texture. This recipe makes a big batch and can be stored in an
airtight container and kept for about 1 week.

Number of Servings:  24
Serving Size:  1/2 cup

--------------------------------------------------------------------------------
Ingredients  Measure  Weight
plain air-popped popcorn (about 1 cup unpopped)    12 cups  ---
granulated sugar    1 cup  ---
stick margarine    10 Tbsp  ---
light corn syrup    1/3 cup  ---
vanilla extract    1 tsp  ---

And here is their caveat:

Not all recipes presented here are necessarily appropriate for all
people with diabetes, nor will all recipes fit into every meal plan. No
two meal plans are alike. Work with your health care provider, diabetes
educator or dietitian to design a meal plan that's right for you, and
includes the foods you love. A key message for people with diabetes is
"Carbs Count." Foods high in carbs (carbohydrates) -- bread, tortillas,
rice, crackers, cereal, fruit, juice, milk, yogurt, potatoes, corn,
peas, sweets -- raise your blood glucose levels the most.

****

Why on earth would they have a recipe-of-the-day whose mains
ingredients are shown (and they admit that) to boost blood glucose
levels the most. Why? because their sponsors can sell more bg test kits
and insulin and bg control meds.

Their corporate supporters:

Do not donate to these jackasses. They are not in it for the
victims/diabetics they are in it for the victimizers. That makes them
directly complicit in harming millions of diabetics.

Good question.
