""I have no clue how iron is involved in diabetes. I have not read any
studies linking iron to diabetes. I have read very little. In fact I'm
not sure I .. can .. read .""

Let me help you.  In that well known to you study these levels of risk for
diabetes and iron were found:

1. total iron eaten not related to risk of diabetes.

2.  iron from poultry and seafood not related to risk of diabetes.

3. bloodletting had no effect on risk of diabetes.

So much for the iron causes all disease idea, what's your next project?
