microwaving

Microwaving is very convenient but I read a study a while ago showing that
microwavinhg destroyed just about all the flavinoids in broccoli. I have
oatmeal every morning which I microwave and I 'snack' on sweet potato. What
do you think?

There are somewhat mixed studies about microwaving. I recall that there is
one early study showing that heating milk by microwaves denatured milk
proteins and transformed amino acid L-proline to D-proline, which is toxic.
But in some later studies that was not confirmed. Personally I try to avoid
microwaving. I have time to cook my whole grain spelt porridge
very...very... slowly.

Try steel cut oats cooked very ver slowly... ;-d

I have never been able to find an automatic porridge cooker. I'm always 'on
the run'.

You could cook it the night before, put it in the fridge and then just warm it
up.

Microwaving is cooking just like heating any other way is cooking. There
have been many self-serving studies by folks with axes of one sort or
another to grind about it. The simple fact is that for any given study
that shows disaster and doom, there are others that are cheerful and perky.

It's not world peace, it's just lunch.
