Nutrient content of large ungulates

Following along the lines of the evolutionary nutrition idea, I would
be very interested in any data on the total macro- and micronutrient
content of cattle, buffalo, rhino, elephant and so on. Ive never seen
this info for the whole carcass.

This does not encompass everything you asked for, but may be a start.  There
are many references.  It is actually for feeding whole carcass meals to zoo
animals and is also a reference for individuals feeding their dogs and cats
a raw, prey model diet.
