Im taking the supplements but, how did she backtrack on her diet?
Slowly adding carbs etc?
It seems like mine is all over the place, one set of nerves goes, than
a different set, but the previous set seems fine. I hope there is a
way to reverse all this and there reallly isnt damage.

Sounds like you have acidosis. you whole body is too acidic and you need to
raise your pH level. This can be associated with too many proteins and loss
of electrolytes via sweating etc.
Try this
Baking soda (sodium bocarbonate) at 10 am and 4 pm each day (not close to
food), about 500mg (large capsule size) for a few weeks. If it works, get
on more magnesium and potassium and start eating fresh vegetables, not
cooked.

Funny, I thought it sounded more like alkalosis, the paresthesia
symptoms are more associated with that arent they?

It is possible although not likely in most diets. The symptoms are almost
the same.

Yes, but the neuropathic pain in her feet was the main problem.

She slowly improved after about three months and then, after about a
year, she started to improve quite a lot. We are hoping she will be
back to normal one day. The "experts" estimates vary from 18 months
upwards.

She has been building up on the carbohydrates very slowly.

Have you seen a neurologist? Your problem may not be diet related at
all.
Peripheral nerve damage will recover very slowly.
