Can anybody explain what tartrate actually is? Like in Choline Bitartrate.

A simple organic acid come to grapes and can be a byproduct
in wine making. L. Pasteur did the early work with this chemical.
There is a right handed molecule and a left handed molecule in
common tartaric acid. Tartrate is the anion name.
