Do nutrients decline when food is stored? Apples, Tea, Carrots, oh my...

Hello!

My goal is to get the most nutrients from the food I eat. I know a lot
about the nutrition, but one thing I've always been confused about is
STORAGE TIME.

I wonder about how (and if) the nutrients decrease when the food is
stored for days or weeks.

2 examples:

-Apples, cabbage, yams, carrots etc - They last for weeks (sometimes
months) in the fridge.  Are they gradually losing their nutrients? Is an
apple eaten the day I buy it, healthier than eating it a few weeks later?

-Green Tea - all those great nutrients - I usually make it, then store it
in fridge and drink it cold, over the following few days.
Do all those nutrients decline because of the storage, a day later?

Any thoughts on this would be most appreciated.

of course you are losing nutrients. the stuff tastes like crap after
awhile.
if you are eating healthy, you will be getting tons of nutrients so
the small loss is no worry. there are supposed to be yellow and dark
green vegetables. i don't know what they are but I am looking. they
are supposed to be good for you.
