Why don't doctors use gravity to assist in the delivery?

Dropping something is much easier than pushing.

I'm no obstetrician but women in some countries deliver in a squatting
position so I suspect that it is partly cultural on behalf of health care
professionals and women themselves.

I would be interested in comparing the delivery times.

Any suggestions where one could find this information?

Um, well - because physics is only a small part of the equation.

Squatting seems to be the best way to deliver faeces as well, but only half
the world seem to be doing it....
