Dietary fiber refers to everything in a food that is resistant to digestion.
Soluble fiber refers to the portion that is soluble in water--most pectins,
gums, and some hemicellulose. Insoluble fibers (eg, cellulose) are
insoluble in water. The physical properties and physiologic effects differ
somewhat.
