It depends on the medication you're taking, what other medications your on
and when you eat. I'd ask your doctor. I used to take Welbutrin and was
supposed to take in 3x per day. After a while my doctor suggested I take all
3 doses in the morning when I woke up. This worked a lot better than
stretching it out all day long. I'm not taking that anymore though.

According to the offical Valtrex Information sheet...

... you can take Valtrex with or without food, but no specific time
of the day is specified. All it says is to try to take it at about
the same time every day, so if your routine is convenient for you,
then stick to it, and you'll be fine.

Although I don't know why, my doctor specifically told me to take mine in
the evening before bed...
I'm taking 1 500mg tablet of Valtrex
And that's what I've been doing.
