I know the number to be under after meals is 140, but tonight, I had a
late night snack of some strawberries and whipped cream. (It had been 3
or 4 hours since dinner.) I tested before and was at 98. An hour later
I was 130, and another hour later I was at 105. At first I thought all
was okay, but then I wondered if a jump of 32 points was a bad thing,
especially for just about a cup and a half of food.

How many strawberries and what size? For example I can eat
about 10 medium strawberries or 5 large before spiking. Was
the cream freshly whipped with nothing added or out of an
aerosol can? The numbers themselves are ok but there was a
spike and if it were me I would like to know why.

The strawberries were sliced, so I'm not sure how many, but I had about
a cup and half of them. The whipped cream was from a can.

I've had it before as dessert, just after dinner, without spiking, but
this was on an empty stomach.

How long had it been since you'd eaten?  Any possibility the spike was
from a liver dump and not from the berries and cream?

The canned cream could contain sugar. I use it myself on
occasion but not very much at a time.

I had dinner about 7 and ate the berries about 11. I only seem to have
the liver dumps in the morning.

Tonight I had the strawberries and same canned whipped cream for
dessert (steak and salad with olive oil and vinegar for dinner) and an
hour later my BG was 103. I didn't test at 2 hours as I was out walking
my doggie.

If it spikes 32 points, but stays under 140, what happens inside my
body? Am I triggering a big insulin response? I'm I hurting my
progress? I guess I'm wondering if I shouldn't do the strawberries for
the snack... just stick to them as a dessert.

I can't answer that question, but on the strawberries I
jumped from 5.8(105) to 7.8(140) when I had natural yogurt
and strawberries for breakfast. I just had a bigger serve a
couple of hours ago at 2:30 pm - and went down over two
hours from 6(110) to 4.7(85). Mornings are not my best
times:-(

I suspect your problem had more to do with the canned
whipped cream than the strawberries.

Yeah, I've made the discovery that mornings and me don't go well
together. I never was a morning person to beging with, but I had no
clue that my blood sugar didn't like me in the morning. I'm glad I read
the "test test test" post and saw how it was jumping after morning
meals. I usually just eat a protein breakfast and don't slip any carbs
in until lunch.

As to the strawberries, I haven't tried them on an empty stomach sans
canned whipped cream yet, but I did try a few on some low-carb vanilla
ice cream. My blood sugar didn't move... I wish I could say the same
for my intestines! Yow. It tasted good, but I don't know if it was
worth it!

(Sorry for the imagery.)

Did the ice cream contain sugar alcohols?  They often act as a laxative
for some people.

Yeah, it did. It even said on the label, "May have a laxative effect."

Ain't no "MAY" about it!

So should I give up my psyllium and just eat low carb ice cream? ;-)
