I was wondering.......I am watching my carbs and read food labels. Can
anyone tell me is it best to go by the total number of carbs an item has or
is it ok to have things which have say 10 g of carbs but only 2g of this is
sugar ? In other words which is the most important number...carbs or total
sugars ?
Thanks
Julie

Carbs. Your body makes no distinction between sugars and starches;
both push your blood glucose levels up. The only difference is the
rate at which this happens - but saliva contains enzymes that start to
convert starch to sugar as you chew.

Total carbs; if you are American subtract the fibre. Sugar
is irrelevant and included in the total carbs.
What are you using those numbers for? I don't go by the
numbers on the packet, I go by the number on my meter after
I eat them. Read http://jennifer.flyingrat.net/
