It was my birthday today, so we went for a meal at a local fish
restaurant, I had fresh plaice in bedcrumbs and a green salad no
potatoes, and I just couldn't resist the homemade little white finger
rolls. When i got back an hour later my bg was 10.1, since then it has
fallen to 5.8 2 hours pp. Any kind of carb seems to give me a spike !!
Anyway to celebrate my birthday I invite you all to my virtual buffet,
where you can eat huge slices of virtual cake, that contains no
calories whatsoever, but tastes sinfully wicked.

Happy birthday belatedly. White bread spikes are well known - but a
birthday only comes once a year and should be a day when the dreaded meter
is not used. Sometimes it is better not to know as long as it is only
sometimes.

Look... 2 hours later you were entirely back within normal range. You
coped with it, and pretty well too.
I don't know what effect that would have had on a normal person - yes,
I suppose you had a kind of higher spike than normal though. But as
far as I know, the kind of spike you're supposed to worry about is the
one you don't come down from, or aren't down from after a couple of
hours.

I have a low-carb chocolate cake recipe to die for, if you fancy being
low-spike but fattening next year - or you may find that a slice of fruit
cake doesn't spike you tooo high. But hey, once a year is unlikely to
scupper you...

Here's a super-quick, 2 serving microwave version. Yell if you need an oven
one, or a non-American one. Or you could google on "flourless sponge", or
check the BBC food recipes for an AWT orange and almond cake that's superb.

This is one the simplest desserts to make, nice and dense, makes 2
servings at around 6 grams carbs per serving.
Ingredients:
1/4C Almond flour
2 T Cocoa Powder
1/4 t Baking Powder
5 packets of Splenda 5 (3 T + 1 t)
2 T Melted Butter(or sour cream or Virgin coconut oil) I use olive oil
and it works just fine.
1 T Water (or DaVinci's Syrup- any flavor-Hazlenut is great!)
1 Egg
Cooking Instructions:
Mix everything in a 2 cup glass measuring Pyrex and cover with plastic
wrap. Cut a small slit in the center of the wrap to vent. Pop in the
microwave for 1-3 minutes max(check consistency after 1 min,, should
look dryish). No greasing of the Pyrex cup is needed. Mine plopped
right out. Let cool completely or eat it hot!
Serving Suggestions:
Serve topped with a cream cheese icing or a dollop of heavy cream
whipped.
Enjoy! This cake is super easy and super yummy! 6 carbs for the entire
recipe
I've also tweaked this and made it a Chocolate coconut one by adding in
2-3 tablespoons of shredded unsweetened coconut.
