evening meal

need to liven up my repertoire.
any ideas for meals that have an element of carbs in but are lowish spike.
especially chicken and fish dishes

I eat anything and everything
Been doing curries but i can only eat smidgens of rice and have not tried
the rice-substitutes yet.

I eat mine with a papadom if dry (5g CHO) or some mashed cauli if wet.
lentil and spinach dahl is a good bet too. Pickles are an essential
complement, for the vinegar effect plus taste : )

Chicken pieces simmered in stock with olives and lemons, Moroccan style, are
yum.

Turkey breast slices sprinkled with Thai 5-spice mix and fried, cut into
strips and wrapped in a low-carb tortilla with salad.

I found that a small portion of naan bread with evening meal
curries was much kinder on the post-prandial BGs than rice.
I can handle about a half of the standard naan serve. Maybe
it's the oil that seems to be in most forms of naan.

For other veges with roasts etc, my "starchy" carbs are
limited to a very small (golf-ball size) baked spud with a
roast, or equivalent in other forms, with a generous dollop
of butter melted in, which seems to help. For some reason I
can handle sweet potato better than white potato. My
favourite roast vege is baked pumpkin which seems to have
zero effect on my BGs, so I have pumpkin with the majority
of my evening meals. That's our version of pumpkin, not the
US hallowe'en thing.

Unlike most, carrots don't affect me (except in juice form),
nor do tomatoes or onions in moderation. I fill the plate
for bulk with things like cauli, broccoli, cabbage (steamed,
coleslaw, sauerkraut etc), capsicum, onions etc.

In my home-made light thai-style curries for fish, prawns or
similar I include celery, broccoli, cauli, capsicum, onions
etc. On starchier carbs, sometimes I'll add just a smidgin
of sweet corn kernels or even kidney beans to the mix.

pre-prepared chicken cordon blue with green and
yellow beans followed by a caesar salad

pork chop browned in the fry pan
then placed in a casserole dish and covered with
mushroom soup

spaghetti squash to pour the mushroom gravy on and
some green/yellow beans (ok, i eat too many
beans......... it's the alternative to caesar
salad for me........ oh...... brocolli and
cauliflower mix too)

Do you like pesto?  There's a good recipe for Pecan Crusted Chicken in
Rozanne Gold's book, Low Carb 1-2-3.  It is really quick and easy to
prepare.  We love it!

Hi Pete

How much cooking do you like to do?  I like to make a hearty soup - which
then does for 2 days.  Could give you some recipes for this if you like.

Easy fish recipe: chop herbs (parsley, thyme and/or tarragon), grate rind of
lemon, chop clove garlic (plus finely chopped red chilli - optional) and
mix.  Butter baking dish, place in any white fish fillet - cover with herb
and lemon mixture, dot with butter, cut a tomato in half and put in dish cut
side down and bake in hot oven for about 10/15 mins.

Take a chicken breast and cut a slash into it forming a pocket.  Stick
a cube of blue cheese into it and wrap with 2 slices parma ham (I use
cheap black forest ham from LIDL @ 1.49 per pack which has about 17
slices in it - it's stronger but we prefer it).  Bake for approx 25
mins at gas 5.  Eat with lots of fresh veggies.

Salmon - 1 salmon fillet per person, top with 3 teaspoons pesto (the
aubergine one is yummy), top with a couple of thin slices of goat's
cheese or lots of sliced fresh parmesan.  Bake for 15 - 20 mins.  

King Prawns (I use frozen).  2 tbs sesame oil into a wok, sliced
spring onions, saute gently, add finely chopped ginger and garlic,
chopped chillies and a good measure of dry sherry, the sauce should
thicken up.  If it doesn't, add a drop more oil.  A shake of sesame
seeds and then add the prawns and toss lightly just enough to heat
through.  Serve with lots of stir fried veggies such as Pak Choi,
Water chestnuts (tinned), baby corn, courgette, mushrooms, asparagus
etc etc.

Chicken and Chorizo.... I usually make enough for 6 and freeze off two
lots for another day which requires 4 chicken breasts and whole
Chorizo.  Cut chicken into cubes, cube Chorizo, fry gently in some
olive oil,  add a chopped onion and when soft and the chicken is
browned add 1 tin chopped tomatoes, chopped garlic, chopped chillies
if you feel like spicing it up, a glass of red wine and a tbs tomato
puree.  Simmer gently with a lid on for about 20 minutes or so and if
it's too runny take the lid off for 10 minutes to reduce down.  If
it's too dry add some chicken stock.  Serve with green veggies like
broccoli, beans etc.

I could go on..... and on.... but hubby is about to cut the electrics
so I better send and prepare to turn the machine off!

oops... sorry!  If you're making the chicken and chorizo for 6 you
will need 2 cans of tomatoes and 2 glasses red wine and probably some
chicken stock too!  Panicked because of imminent electric cut... and
he did it before I closed down and crashed me anyway!
