Has anyone heard of someone differentiating (adult or otherwise) stem
cells into islet beta cells in the lab?

yes, both

there have been a number of articles on this in the news over the last 3
years

Has anyone ever tried the Edmonton Protocol (islet transplant) using
stem cells (differentiated into islet cells) from the patient instead
of from donor(s)?
