How Spikey Is Too Spikey?

I have been managing early onset T2 for several years now with D&E.
Morning sugars
are in the range of 104-126, with 112 or so being an average (I'd
guess).  Diet is
very low carb, biased toward protein and fat.

My reading suggests that I should strive to be <160 1hr post-
parandial, and <120 2hr pp.
Mostly, I'm there.  But ... I have recently been watching my spike
within the
first hour (testing at 15 min intervals) to see which food spike me
the worst.
(Oddly, oatmeal seems to be a big offender).  So ... I guess the
question is,
just how much of a spike is too much?  If I hit 250 15-20 minutes
after eating but
it's back at 165 after an hour is this "normal"?

ist, I aim for 140 at one hour and 120 at two.  Spiking at over 200 at any
time is too high for me.  I have not systematically tested every 15 mins,
like you, but if my 1 hour is over 140 I cut back on the probable offender
next time I eat it or drop it from my diet.  

You FBGs are also high for my Endocrinologist's standards.  He wants me
below 110 in the morning and I like to be below 100, but don't panic if
between 1100 adn 110.

While it may be normal for an out-of-control diabetic it is
not desirable for you.
