It's the old "Pizza Effect" trick, 99...
Try thin crust next time. Stuffed crust is usually two layers of crust with the stuffing between, thus double carbs.
Or even try ultra-thin crust, home-made: http://loraldiabetes.blogspot.com/2006/11/pizza-with-minimal-carbs.html

From only ONE slice (1/8 of a large)! You might want to check at the 3 or 4 hour mark. Pizza often causes a delayed spike.

This was the first time I've tried stuffed crust. I prefer thin crust (Sicilian style), with more sauce and more Mozzarella.

All he made was thin crust. Pizza and Schaeffer's!

We'd get either that or ravioli. You could get pizza by the slice there. Very uncommon thing here. We'd get that and big salads with balls of mozzarella on them.
Now I have to make do with my rice crust and rice cheese. Not as good as the real thing but at least I'm not allergic.

Purely in the interest of science, you understand, I trialled some pizza recently, since I'd been doing so well for so long.
I cut a small thin crust pepperoni pizza in half, mother had a third of the half and I had the rest, washed down witth Chianti and with a large helping of green leafy salad, followed by my evening meds including 200 mg Alpha Lipoic Acid and my Standard Walk Round The Block, not stopping to chat with any neighbours, cats or dogs.
I tested four hours out and never went over 6.9 (125) and was mostly in the low fives (90 - 100)
BUT
I really didn't enjoy it very much

Having your own is better. Instant exercise partner, motivator and all-round joy.
When I retire, I'm going to get a Jack Russell and take up unicycling or maybe rollerblading.

Patting dogs is also "good medicine." Yes but it can seriously get in the way of exercise, at least with these dark evenings I can *hide* from the chatty ones unless of course I'm looking for an excuse to stop for a while.
Mind you I can be just as bad, I always tell people I won't be insulted if they get bored and walk away when I'm chatting . . . <G>

I hold myself to one slice, because I have a daughter and three grandkids here who love pizza. ;-)

Jigs-n-fixtures bunny-buster@att.net - 22 Feb 2008 14:14 GMT This shouldn't be surprising. A large, thin crust pizza, has about one pound of dough in the crust. Which is the same amount of flour as half a loaf of white bread. The sauce typically has quite a bit of added sugar. So, just think of a slice as two or three slices of white bread, about three tablespoons of jam, and some cheese.
Hmm. Going to spike just about anyone.
When I have pizza, I try to get one that has a thin crust, no sauce, (olive oil and a bit of sliced garlic instead, fresh tomatoes, a bit of Canadian Bacon, and cheese.
I think every diabetic, needs to at least read some cook books to get an idea of how much of what is in common foods. I have found that, the fact I learned to cook form scratch, makes it lots easier to keep things under control. Both at home, and when I eat out.

a bit more than you think.
