Lerp - 27 Dec 2007 02:26 GMT Is there such a thing as a diabetic friendly chili? I am going to experiment by substituting different veggies for the kidney beans to slash the carbs...but the tomato juice seems a bit carby 10 grams carb per 8 ounce serving. Have any of you found any other tomato products that are less carby that you spiced up for chili? I like to eat hefty amounts of chile so any advice would be great!

You should really ask this in alt.food.diabetic, where the cooks hang out.
That said, I use tomato puree and/or crushed tomatoes, but the beans I use are virtually zero carb; Eden Black Soybeans. They're almost all fiber and protein, so that cuts the overall carbs a LOT compared to kidney beans. I load my chili up with small chunks of sirloin (fondue size pieces), extra lean ground beef, and some browned hot sausage (1 lb of each), too. I use on chipotle in adobo for each large batch of chili.
Pretty much all the carbs in my chili are what's in the onions and the tomato.

Chili is very diabetic friendly. Real chili contains no beans at all. Just meat, onions, tomatoes and seasonings. I put beans in mine because I like beans. I've never heard of using tomato juice in chili. Tomato paste, sauce or even salsa, but not juice.

A red chili sauce, onions, cubed beef, and herbs/spices. Sometimes with beans, but if beans are added, then only pintos (less often since DX.) And sometimes with other/different chilis (serranos, chipotles, etc.) But NEVER tomatoes. At least no one has mentioned the dreaded... chocolate, or pasta, as ingredients. :/

There are several varieties of all meat i.e. no bean chili. Sometimes we mix that half and half with a 'normal' one.

True chili uses no tomato, fyi, just various peppers.
For the beans if that's what you like, I've used black soy beans with reasonable success. The Texture is different but not terribly objectionable.
From there, I'm sure you have your own favorite ingredients. :))

I top it when done with a bit of diced green onion and sharp cheddar cheese...so good!

TrekMan - 27 Dec 2007 12:49 GMT Everyone's idea of "real chili" or "true chili" is a bit different. I use whole peeled tomatoes cut up and crushed tomatoes. I have tried different beans, and yes I believe chili should have some beans, and a mix of meats like sausage, sirloin and ground meat. As my son suggests, maybe 7 to 300 cloves of garlic too. For the heat I use a couple of seranno peppers cut up really fine, seeds and all (that's where the real heat is). And of course, most cooks have one "secret" ingredient. I have heard of peanut butter, never chocolate. My favorite is cinnamon. -TrekMan

There are many reasonable and tested diets that do not need an absurd mantra that "hunger is good."

Good chili should also double as a paint stripper. To that end, spike the sh.t out of it with Frank's red hot and replace 1/2 of the tomatoes with as much Rotel tomato / green chili sauce as you can stand.

You can try using the BLACK soy beans, available inorganic sections of the stores or at health food paces. they come dried or in cans(but havn't seen the cans in my neighborhood.) They are very high fiber and low carb, but take a dickens of tie to cook if you use dried and soak the m overnight adn if you eat too many have the problem that lots of fiber sometimes has of kind of loosening you up, but they don't spike me so I use them in moderation.
I find that tomato products like fresh or canned tomatoes, etc don't spike me and work better for a chili recipe tht plain tomato juice.
Experiment a bit and make it as hot as you like thtat doesn't generally spike anyone:-)
