Nick Cramer - 29 Nov 2007 04:12 GMT Jun's friend brought me a tray of 8 pieces of Nigiri sushi, 2 shrimp, 2 tuna, 4 crab/avocado, and a tray of "Caterpiller roll", which I think was cooked eel on a rice roll with crabmeat, a breaded, fried shrimp stuck in each end. Enjoyed with wasabi, pickled ginger and soy sauce. It's been so long since I've had sushi that I forgot to take my FBG before starting. Didn't watch my rice intake, either. One hour BG 234. <sigh>

If your BG at 234 came "down" pretty fast ie. 2 hrs later you should feel even better..

Arrrrrrrgh! Jun heard that and brought me five Thai fatalajon pellets (500 mg raw, unprocessed Andrographis Paniculata). Told me to check my BG in another hour. My sweet jungle girl!

Jun's Nam Prik Kii Gaa (Spicy Crow Poop) Dipping Sauce:
You will appreciate Pee Jun's scientific precision (and my parenthetical 'refinements')
1 full hand Jalapenos, chopped (2 cups?) 1 big red onion, chopped (1 cup?) gra tiem or garlic, crushed or chopped (1 cup?)
pan-fry, no oil, until nicely done (?)
1 handful (1 cup?) dried shrimp
Pound in mortar or blend in blender or food processor. Add:
2 or 3 Tablespoons lime juice, to taste 2 or 3 Tablespoons Fish Sauce or Nam Pla, to taste. Better too little than too much. 1 or 2 Tablespoons sugar, to taste
Adjust consistency to be like a dip, with hot water if necessary. Good as a dip with cucumber, celery, carrot, broccoli, etc.
NOTE: Jun also uses canned tuna or salmon as part of the shrimp allotment, and Splenda instead of sugar in mine.

One hour BG 234. <sigh> Yep. I can't eat sushi rice. I can eat regular rice, but only a small amount. I usually have it mixed with soup. The only time I seem to be able to eat a large amount of it is when my gastroparesis is acting up and I am throwing up. Then it seems to move right through me when nothing else will.

This is very close to what Jun makes, except she uses fresh, fried minced garlic and adds ground white pepper, instead of dried red chile flakes. This excellent "chicken soup" is especially nice for invalids and babies, with its soft, digestible rice--a barely coddled, protein-rich egg--tender, ground pork bits--and appetite-stimulating spices. (The chilis really pack a wallop, so be careful!) The soup is also traditional for breakfast. Serve this hot to 2 people to coax their appetites--or double the recipe for a savory breakfast or lunch for 4 people. Leave out whatever you can't handle. When I've been real, throwing up, sick, she's made it with just the rice and half chicken stock and half water, for me. Like Bobe's chicken soup, this should be eaten as hot as you can stand it!
* 2 cups light chicken stock * 1/4 cup ground pork * 1/2 cup cooked rice * 1 Tablespoon nam pla or other fish sauce * 2 small eggs
Garnish: 2 teaspoons finely minced fresh ginger root; 2 teaspoons minced cilantro; 1 minced green onion; 1 teaspoon golden friend onion flakes (which you can make by tossing dried onion flakes in an oil slicked frying pan); and 1/8-1/2 teaspoon dried red chilis, minced
In a saucepan, bring the stock to a boil and add the ground pork, stirring to break it up. Reduce heat to a simmer, stir in the cooked rice, and simmer for 2 minutes [even up to 1/2 hour - Nick]. Season with the fish sauce.
When ready to serve, break a whole egg into each individual bowl. Bring the soup to a boil and ladle over the egg yolks. Garnish with ginger, cilantro, green onions, onion flakes, and as much chili as you think you can handle. Cover the bowls with lids, let sit for a minute to let the egg poach, then serve to your sick chicks.

When I used to go to sushi bars, I would always order a platter of mixed sashimi. Jun felt so bad about getting me that sushi yesterday. Told me it was for two days. When I get a craving for raw fish, she says she'll drive me down to Mitsuwa in Little Tokyo for some sashimi grade. ;-)
