One of the most filling and satisfying lunches I have is low-carb pita
pockets filled with tuna salad.  I make the tuna salad with Miracle Whip
lite and no-sugar-added sweet pickle relish.  Sometimes I have lettuce to
add, sometimes not.  Today my wife and kids dropped by the office so we
could deposit my paycheck (I don't drive) and the kids wanted McDonald's.
This was right before I was to make my brought-to-work lunch, so I got a
side-salad and got the Newman's Own Ginger Asian dressing.  I decided to use
the salad greens in my pita pockets, and I also added the dressing to my
tuna salad mix, yum!  Haven't checked my BG yet, but I suspect it shouldn't
be much higher than usual.  The ginger dressing is pretty sweet, but it only
has 15 carbs, so it's like eating one slice of bread, right?

Now that I think about it, it's been an hour since I've eaten, and I have
the free mini tester here at the office...

142.  Not a great score, but not bad either, especially since I feel like
that guy on the Taco Bell commercial raving about their value menu... I'M
FULL!!!!

I often eat tuna with real mayo wrapped in a low carb torillia  and lettace.

Today i ate one ouce tortilias with one ounce seasoned beef and a ounce of
chedder cheese meted on top and a big serving of fresh salsa that i make
with onion and celantro , tomatoes. lime juice and a shot of hot sauce if i
want even more heat all diced and mixed in a large bowl.

Pre meal numbers was 90..one hour 120 and 2 hour 96  and i was very full.

Best part is i got tons of left overs to make wraps with low carb tortilias
or more nachos for a couple days.

Yeah, I said 21 grams of fiber!  Goodness.  Haven't tried them yet,
but if they're edible then Tex-Mex is back on my menu!

but if they're edible then Tex-Mex is back on my menu!

I buy some whole wheat tortillas that used to be labeled to show a whopping
amount of fiber in them.  Oddly, each time I would buy them, they would
change that amount.  I know it couldn't have been as high as they said it
was because when I ate what they said would have amounted to about 15g of
carb, I'd be spike city.

I juast ate good old old dutch resteraunt style white corn totrillias with
my meal...but i used a digital food scale to eat exatlly one ounce.
I am learning more and more i can eat most foods if i eat a small portion
and read the labels.

Try the hidden carb test to see if the numbers add up. Do they add up?
There use to be a tortilla on the market that had claims but they had to
change the label as they were doing fancy math. :)

Which brand of tortillas are these?  Also what size are they?

Ohhh whats the name of them and where bought?

Keep us updated!

As i recall real indian corn stone ground isnt anywhere near as high carb as
the sweet corn mass produced and used in the foods we eat today.
So makes sense it would have more fiber if they are using a old variatal of
corn.

Sorta the same idea behind dreamfields and other food items..they find a old
pre bio engeneered varital and grow it and its naturally good for you.
