I have been drinking 2 tbsp vinegar before all meals for the past few days,
and it does seem like my insulin needs are decreasing a bit, and I have lost
a pound. It's too early to come to any conclusions, but it has got my
interest piqued.
One of the posts in another thread talked about vinegar having Acetic Acid
in it, so I searched on +Acetic +Acid +diabetes and came upon the following
article. Helping the muscles to take in glycogen instead of the glucose
being converted to lipids sounds like a very good thing for those of us with
insulin resistance.

To investigate the efficacy of the ingestion of vinegar in aiding recovery
from fatigue, we examined the effect of dietary acetic acid, the main
component of vinegar, on glycogen repletion in rats. Rats were allowed
access to a commercial diet twice daily for 6 d. After 15 h of food
deprivation, they were either killed immediately or given 2 g of a diet
containing 0 (control), 0.1, 0.2 or 0.4 g acetic acid/100 g diet for 2 h.
The 0.2 g acetic acid group had significantly greater liver and
gastrocnemius muscle glycogen concentration than the control group (P <
0.05). The concentrations of citrate in this group in both the liver and
skeletal muscles were >1.3-fold greater than in the control group (P > 0.1).
In liver, the concentration of xylulose-5-phosphate in the control group was
significantly higher than in the 0.2 and 0.4 g acetic acid groups (P <
0.01). In gastrocnemius muscle, the concentration of glucose-6-phosphate in
the control group was significantly lower and the ratio of
fructose-1,6-bisphosphate/fructose-6-phosphate was significantly higher than
in the 0.2 g acetic acid group (P < 0.05). This ratio in the soleus muscle
of the acetic acid fed groups was <0.8-fold that of the control group (P >
0.1). In liver, acetic acid may activate gluconeogenesis and inactivate
glycolysis through inactivation of fructose-2,6-bisphosphate synthesis due
to suppression of xylulose-5-phosphate accumulation. In skeletal muscle,
acetic acid may inhibit glycolysis by suppression of phosphofructokinase-1
activity. We conclude that a diet containing acetic acid may enhance
glycogen repletion in liver and skeletal muscle.

My bgs/fgbs are way down round-the-clock since I've been pouring the vinegar
(balsamic - lots of it, although I don't think the type matters) on my
nightly salad. I'm racking my brain as to what else, behavior-wise, I might
have changed since that day.... can't think of anything. I still can't
believe simple vinegar can bring on that much of a change... but it looks
like it does, so far.

I've discovered the same. In fact, small amounts of apple cider
vinegar and lemon juice concentrate lower my BG. I've read it's their
acetic acid content. I often mix small portions of apple cider vinegar
with lemon juice concentrate, add a bit of Stevia or Splenda and stir
into a glass of ice water. Be creative... vinegar and lemon can be
incorporated into some great tasting barbeque sauce, etc. One tasty
example:
Indispensable Almost No Carb Barbecue Sauce
This isn't a substitute for the "real thing," it's an improvement.
It's so good the rest of the family gobbles it up and I have to keep
making more.
3/8 cup vinegar
1 1/2 cup tomato sauce. (1 15 oz can) Don't buy a tomato sauce that
has spices or flavorings in it!
3 tablespoons Worcestershire sauce
1 1/2 tablespoon yellow hot dog mustard
3/4 tablespoon Franks Hot Sauce (the chicken wing sauce)
3/4 tablespoon salt (optional)
1 dash cayenne pepper. Go easy!!!!
3 teaspoons lemon juice
1 1/2 teaspoon liquid smoke flavoring
6 teaspoons Splenda or 18 drops of Liquid Splenda
Add vinegar and all other ingredients except mustard to a sauce pan
and slowly heat. Put mustard in a cup and slowly stir in a couple
tablespoons of sauce until well blended. Then add mustard mixture back
to sauce in pan. Bring to a boil, and lower heat. Let simmer for a few
minutes. Let cool, then refrigerate.
Note: this sauce will taste a bit peculiar if you taste it when it is
still hot. Don't worry! Something magical happens when it sits in the
fridge.
Carbohydrates per Serving (1 tablespoon): Less than 1 gram. Half an
ounce is 1 gm carbs, 6 calories.

what type of vinegar are you drinking, and are you simply drinking
straight from the spoon/measure?

I have already drank balsamic vinegar, white vinegar and apple cider
vinegar. With all of them I have measured 2 tbsp into a cup and then added
a splenda packet. The balsamic vinegar was the yummiest, but when I ran out
I drank the white vinegar that I have around for cleaning. It was the
yuckiest. Then I bought more balsamic vinegar and some apple cider vinegar
at the store. I have read that the apple cider vinegar has the most acetic
acid. It is also a lower price than the balsamic vinegar.
