Hello friends...

As many of you know, I am married to a true gourmet cook. Well,
tonight I sampled a portion of "to die for" blueberry baclava, made
with fresh blueberries, chopped walnuts, honey, and tabouli... Yes, it
was very wicked and totally "avec plaisir"... One thing about that
stuff, I have to really watch it and back off, after only a few
nibbles.

Still amazingly good! :-)

Been having some of that salad lately, also.... I typed in the wrong
word.... It was a long day. Had a jury trial today, and I am totally
exhausted.

Yep, it was, Cheri.. The meal did include tabouli... I was just in the
ozone from tiredness.

Another feature of dinner tonight is that we had a homemade
horseradish sauce to go with some very nice eye of round roast, some
of those green beans, and Australian Shiraz (2006)...

The BG one hr pp is about 135. (Trying hard to hold on to the
guidelines).

Hi Alan... It was an '06... I don' t think '07 is very ripe yet.

In fact, as I write this, I have decided to have another small glass
;-) Lindeman's Bin 50, just to double check and make sure it is still

Hi Loretta,

Yes, it was truly a fine meal... Most of the time we have really fine
meals. The idea is to focus upon flavor and taste, while taking the
time to really enjoy it, rather that focusing upon the quantity...
Eating that way, a little goes a long way, the food is very enjoyable,
and the diabetes is easier to manage, as long as the overall meal does
have an excess of carbs and is relatively low-glycemic.

If I had "loaded up" on the baclava, though, and not balanced it out
with the other stuff, I might have been in trouble.

Except to say that I did once know a young woman who used to think

LOL, that reminds me of my youngest sister many years ago when one of
the in-laws was showing us the cockroach he had had tattooed on his
hip. Of course, when we went back inside, she told a room full of
elderly relatives that he had a cocks***** tattooed on his hip. It was
like someone had dropped a bomb in the middle of the room. She was so
terribly embarassed, and we still kid her about it to this day.

Reminds me of when my brother and I saw "Good Morning Viet Nam" (my
parents had seen it first, decided it was o.k. for us to see with
guidance and took us).  Well, we didn't understand the term "blow job"
used in the movie--thought maybe the guy needed a new hair do! LOL. My
dad looked up the term in the dictionary for us, and the definition was
fellatio.  We didn't know what that was, and dad wouldn't tell us. Being
the smart cookie that I am, I looked it up in the dictionary later. I
was kinda disgusted by it. Wouldn't want a pastry made with it, that's
for sure!

Food is neither wicked nor sinful.

The problem is not the food but your insulin resistance (IR/MetS).

Those without visceral adipose tissue (VAT) and beta islet cell
insufficiency would be able to eat a normal serving (2 ounce) of your
wife's blueberry baclava without persistent hyperglycemia.

Most of them that I have, John, are made with Splenda... She does cook
for a lot of groups and gatherings...

We have thought of opening up a restaurant or a bake shop, but it
seems like an awful lot of work...

The one thing about Baklava Will, is that it is so sweet that more than
a few nibbles could make someone nauseous.  I havent had any in a long
time,  Maybe I can get one and have a few nibbles.

This is confession time ...

I had previously posted that, wehn I started in here and testing my BG,
I regularly got results of around 190 - 210 ...
Then, following a restricted regime, I got down to a regular 140 - 155.
Lately, I have been hitting 110 - 120 on rising (good for me, I said) !

So I had an ice cream ...

About an hour afterwards, I measured 330 !
My wife went spare ! ...

We went for a walk and maybe 3 hrs after the ice cream, I was back
down to abt 121, I think.

I tell this as a cautionary tale to any lurkers and others who think they
can get away with an "occasional sin" ...

Want an ice cream ? .. don't even THINK about it !

Wow! Now that's a spike. I've never had anything (to my knowledge) do that

Before you go too ballistic - ice cream has a habit of
leading to sticky fingers. Are you sure the test site was
clean?  Any time I get a wild reading (not often, but
sometimes) I re-test after a wash.

I eat ice cream without spiking - but the portion size is
one smallish scoop. I also delay that treat until at least
an hour after the main course, and usually test prior to
check that I'm not starting with a high before I eat.

At least try one more time:-)

I had a similar experience with ice cream, my all time favourite food.
I decided to try an ice cream cone, so we went to McDonald's (maybe
not the best ice cream!) and I had just the ice cream off the top of
the small cone and gave hubby the rest. An hour later the bg was 8.5
and my readings until supper time the next day were higher than
normal. I guess I am not ready for treats yet!

Yeah - I'm not even sure it bears any relation to dairy product - try
a full-cream icecream. My favourite coffee icecream is 11g CHO per
100g, no worries for a 2-scoop serve. It's one of my standby desserts
if we have guests, with an expresso poured over. Yum!

Mcdonolds serves a ice cream like substance..not real ice cream..lol.

Real ice cream is cream and egg yolks and vanilla bean and sugar.

Least to me it is and only the sugar would spike me in that mix...so i get
ice cream with less sugar and more cream in ingredients.

Plus the big key is to eat a appropriat serving size...try eating a small
cone at dairy queen..that was a regular cone once.

A real serving of ice cream seems very tiny to us now because we eat so much
more now...but if you re-learn to eat portions sizes it fills you and
sastifies you.

Alice, I do what you do.  and if I want to go to mcdonalds, I order a
kiddies meal with no bun.  they are just the right portions,  burger
king and any of the fast food restaurants have kiddie meals and I even
get a toy.

I do that at Taco Time.  It's the only place that I feel is safe with our
food allergies.  They make all of their food from scratch.

McD's puts milk and wheat in the fries.  Technically I could eat at Burger
King but I find their food to be inedible.  Not sure what they do to it.

Ever see on tv the portion that was for an adult 20 years ago compared to
today?

Even the kids size meals are almost double what an adults meal was
then..amazing.
And the calorie count is insane...kids will now eat in one meal what an
adult did in a day.

Well, there is ice cream and there is ice cream... I find that I can
get away with a little less than 1/2 cup of "French Vanilla" that is
low carb (ie., made with Splenda)..... The problem with ice cream is
that a lot of people have trouble limiting the amount and in avoiding
those sweetened with sugar.

Frank, how much ice cream did you have.  If you have about three ounces
, and your pre eating number is good, the ice cream might not present
such a problem.  We all cheat

Yes ... I wasquite pleased with my progress .. and I still am.

After all, I *did* learn from the exercise.... (no, NO sticky fingers)

And I am pleased that I know what to do in case of another spike ...

NIbbles dont spike..as long as its like 2 bites..
I discovered i can sneak a bite or two of wifes oatmeal with zero rise.

Hard part is makeing sure thats all i eat..lol

Sounds gorgeous... I sometimes make a "deconstructed baklava", with
just a single sheet or two of filo on top. It makes a great baked
container for goodies too, if you fold it in a triangular parcel -
definitely naughty but nice!

Having been to Turkey a few times, I know what kind of stuff was
in my mind when I started reading about sweet stuff & Middle East
cuisine ...
I stopped reading it after that ... I don't need any temptation ... I've
enough as it is !
