Blanched fresh green beans... very green. Cooked in boiling water for
two to three minutes, then washed in cold water. Lay out on a plate,
or platter, and serve with a dip made of the ranch dressing of your
choice... or make your own with a sour cream base. It will not cause a
spike, and it is a tasty refreshment.
It works pretty well, and it alleviates any desire for chips.

Sounds like a safe snack, Will. My wife decided to make her own ranch
dressing after reading what's in the typical ranch dressings. Here's
her recipe:
1 carton firm tofu
3/4 cup mayonnaise (we use Smart Balance)
1 tsp garlic powder
1 tsp onion powder
1 tbs dried parsley flakes
3/4 tsp pepper (to taste)
2 tbs apple cider vinegar
1/4 cup buttermilk
mix above ingredients in food processor
for added kick add several jalepeno peppers to the mix
this works well with celery sticks, bell peppers, sliced zucchini -- I
don't know about green beans, I'll try it

That wouldn't do it for me. I like green beans a lot but not any kind of a
dip. Generally like them plain although I used to like them with slivered
almonds. Danged almond allergy. Also like them with Bavarian noodles,
onions and/or bacon, but they have to be done right to have them with the
bacon. Two to three minutes of cooking just won't do it. Has to be
something like a half an hour until they are pretty much mush.
I don't mind crisp tender green beans if they're plain, but a lot of people
I know won't eat them that way. They say they squeak between the teeth.
I also fail to see how that would alleviate a desire for chips. Not that I
desire chips very often. But when I do, it is the salt I want. A better
snack for me would be raw baby carrots dipped in olive oil and sprinkled
with salt.

Very good just raw too as long as they are fairly young stringbeans, not
too wooky.

When I started low-carbing I was known to frequently proclaim that
"green beans are the new noodles!" Stroganov on steamed french cut
green beans is very very yummy.

i do use them, whole and microwave steamed for my diabetic spacetti, with
italian hot sausage and tomato sauce. Very yummy!

then served with lemon juice. Yum. If I'm feeling decadent, I might put
a little butter on them before the lemon juice, but usually the lemon
juice is plenty.

Thanks, Emily, I never tried just lemon juice with the green beans, al
dente... The butter with the lemon juice sounds like a real taste
sensation... I'll give it a try!

Pretty much anything you do with green beans is a good deal for me.
Cooked or raw.
I really like them stir fried or steamed, with a little oil (whatever
flavor I'm into at the time), and chili pepper or pepper flakes. I'll
often toss in a couple of chopped up jalapeno or other hot pepper into
the mix as well.
