Well, today I found that those black soy beans that I heard about here
really work as a low carb bean.
We had an indooe day as hese was an enormous rain and wind storm outside
so it was a good da for doing laundry and doing long cookins, so I made a
chili with the black soy beans. I soaken them overnight and then had to
cook them for about 3 hours today to get them soft enough to add the other
ingredients of browned chopped meat, spices, tomatoes, etc. I had
a large portion as my dinner tonight along with a green salad and a
small piece of cantelope. a scant hour and a half after dinner I tested
and was at 92! this is much lower than I usually am after a protein, low
carb veg, salad and fruit dinner. I will check again to make sure there
is no delayed spike, but this looks like a great success.
I think it is about 20 years since I allowed myself to have a meal like
this. It is wonderful! Just thought I would share this info with all of
ou and thanks to asd for the advice about these beans.
Now if I could only find the shiratake noodles:-(

Do you have a pressure cooker? I find them marvellous for quick cooking of
beans that don't soften for hours.

Unfortunately, I have a broken one and cannot find another brand of new
one to get for less than $140!
One caveat to my earlier post. I think I ate too many beans last night
as I was up during the night with quite some gastric distress and ended up
with an immodium. I think I wil have to moderate my eating of beans until
my system remembers how to deal with them:-)
I also tested at more than 3 hours and was at 83, afer my 92 an hour ad a
half plus earlier.

Hi Wendy,
I have a Magafesa pressure cooker and love it. It was WAY less than that
amount. What is interesting is that it comes with one lid and two bottoms,
a large pot and a small pot. The opening at the top is the same to
accommodate the same lid. If you are making a large amount of something,
it is great to have the large pot. If you are just making a small portion
for one or two people, the small one is great.
A quick search turned up this page, where there are several models of
pressure cookers shown, including the one with the two bottoms, that I

last night we had some of the leftovers and I had a less generous serving
along with a lovely artichoke and had only a little gas-no immodium
neeed:-) I guess Lorettas, "portion control" is one, again the order of
the day.

I've found that the Eden canned black soy beans don't need any
precooking.

In NY, most supermarkets have Eden canned black soybeans in the natural
foods section, and pretty much every HFS I go to has them.

I was responding to her problem finding shirataki. I wouldn't expect to
find black soy beans in an Asian market.

I found another use for them last weekend - half a tin, pureed, made a
GREAT thickener for the sauce from a chicken casserole. It was a red
wine base, so the colour wasn't startling :D
