Helen - 13 Dec 2006 05:57 GMT Hey all, hope you are all well... Does anyone else here have the luxury of having both type 1 and ceoliacs disease? My son does and it makes it tough for menu ideas. I have a good dietitian, but my son is so sick of the same food all the time... Any good recipes, especially for Xmas treats would be greatly appreciated, ones that are gluten free and not going to send his BGL's through the roof.. cheers Helen from Oz

* 2 (8 ounce) packages cream cheese * 1 1/4 cup pourable Splenda * 1/3 cup HERSHEY®'S Cocoa Powder * 2 tablespoons GF Flour * 3 eggs * 1 (8 ounce) container sour cream * 1/2 teaspoon almond extract
* 1 (21 ounce) can sugar free cherry pie filling, chilled (I use Comstock)
DIRECTIONS
1. Heat oven to 325 F. Line muffin cups (2-1/2 inches in diameter) with foil bake cups.
2. Beat cream cheese in large bowl until smooth. Add sugar, cocoa and flour; blend well. Add eggs; beat well. Stir in sour cream and almond extract. Fill each muffin cup almost full with batter.
3. Bake 20 to 25 minutes or until set. Remove from oven; Cool completely in pan on wire rack; refrigerate. Just before serving, garnish with cherry pie filling. Cover; refrigerate leftover cheesecakes.

Gluten's not an issue for me, but she changed it, above to GF (gluten free) flour or she says you could possibly just omit the flour altogether. And, it's pretty low carb. Also they are delicious!

But, I bring it up because I regularly eat the protein pancakes that are in Dana Carpender's 500 Low Carb Meals cookbook & they are very low in carbs & I believe they are gluten-free (or could be if the ones I'm eating aren't.) Hope that makes sense.
Anyway, they're delicious and a traditional breakfast food - although they stick with me so much longer than regular pancakes used to. I eat them with a little Cary's sugar free syrup, sometimes a little butter or Lite Butter or Total Contral butter or whatever. The texture is right, as is the taste!

The texture is right, as is the taste! I don't buy whey because daughter and I are both allergic to dairy. I just know that things do vary as to whether they have gluten in them or not. Some pudding mixes have gluten, some do not. That's why it's important to check each package you buy, each and every time. We were recently surprised by Mentos, a candy my daughter had previously eaten with no problems. She's not celiac but she does have an allergy to gluten and other foods. She had been getting nosebleeds and we traced that to the peanut oil they are now roasting cashews in. But then she got a nosebleed after eating a Mento. What was in them? Glucose syrup (wheat based). Gah!

It's about a medication under development (not expected to be available for a while yet, unfortunately) which will supposedly reduce the dietary limitations of people with celiac & T1. It might be worth keeping an eye on, or it might be all gluten-free pie-in-the-sky, who knows.
