I 'm down a total of 49 pounds since I started my diet and exercise program
January 13, 2005. I passed the one-year mark over two months ago maintaining
the weight loss.

Eating slow carb has made a huge difference in my overall health.

By the way, I made a terrific  low carb clam chowder yesterday using
unsweetened soy milk with soy flour as a thickener.  Instead of
potatoes....Zucchini!!!  Of course, celery and onion sauteéd in olive oil
plus some chicken stock were added.  NO BEANY TASTE!

I'm impressed with how easily soy flour blends with the unsweetened soymilk
base to create a thick and creamy soup. No need to use extra fat to
facilitate the blend.

Complementary chemistry apparently.

My blood sugars one hour PP were 97.

Type II
A1C 5.3
Body fat 22%
Slow carb diet
Low dose insulin plus Metformin
daily exercise

Has the reduction in weight helped?

i.e. if you eat a high carb meal now, would you be able to
tolerate it better now as compared to 3 months ago i.e. lesser
1 hr & 2 hr PP's?

Excellent! BTW, I could taste soy anything even if I had no
taste buds ;) The GI rocks.
