I saw an interesting recipe recently for Greens & Beans with Sausage.
I tried it tonight and it was quite successful. My 2hrPP BG was 103.

I've posted the recipe on A.F.D
or, with photo, at: http://www.bigoven.com/recipe160699

Hope you enjoy it.

Thanks, Pete. Now, I know what's for dinner tonight!

That's QUITE the load of fats, especially saturated.  Keep in mind the link
between diabetes and heart disease. :(

I would not try this recipe.  High in protein (good); low in carbs (good);
high in fats (bad).

You might try it with smoked turkey sausage which would drop the saturated
fats down some.
The neat thing about that recipe was it's flexibility of ingredients.
It's sort of a, "Put what you've got, in the pot" thing.

Pete,

It was absolutely fabulous. We used a low fat Turkey Kielbasa... Goes
great with a nice Cabernet... I even wanted seconds!

I am working on coming up with something to give you in return.

Thanks again.
