Who says diabetics have to eat boring food?

Just for fun I did a de-carbed version of Saganaki (Greek Flaming Cheese).
It's a nice way to start off a meal or have a snack with friends. Usual
cautions apply about flaming foods: Keep only a small amount of liquor at
the pan. Don't pour straight from the bottle and don't overdo it. The idea
is to impress your diners, not terrorize them with a fireball. =;)

Yummee!  Both versions sound great, but I have no clue where I'd find
the Greek cheeses.  Pepperjack is right up my alley, though.  Yee Haw!

Almost any fairly hard cheese will work. I got some Greek cheese at a local
specialty market, but we have a large Greek community here.
