Well, it is interesting, but I doubt many T2s could handle the beans
and keep low bg numbers. I know I am going to miss lentil soup this
winter; I used to have it regularly, but one serving of my summer
lentil dish showed me that I can't eat that any more.

If you're fairly new to treating your DM, this might not be a forever
thing. Now that I'm up to dose on metformin and have dropped 40 lbs,
I'm able to eat things I couldn't look at right after diagnosis.
So, don't necessarily give up on anything. And remember that portion
control is also our friend.

Susan,
You can still eat lentil soup if you make it yourself, just use a higher
percentage of lower carb vegetable and fewer lentil in the mix and eat
somewhat smaller portions. Try a few variants of your invention and test
the results A pure lentil dish can be a problem, but a cup of lentil
soup, made less lentil rich, can be just fine! I sometimes even have a
cup of this soup in a diner near me with a leafy green salad for my lunch,
with the 8oz of soup givign me the carbs and the salad some additional
bulk. I don't do this every day, but for an occasional treat. Try it and
test at 1 and 2 hrs to see the results. Just don't pig out on a huge
bowl:-)

Thanks for the encouragement. So far my dr has me trying diet and
exercise; I lost 20 pounds in one month, eating really very little. We
will see how it goes. Metaformin seems like it might be something i
could get good from; I like the idea of cutting some insulin resistance
while I continue the weight loss.
I'll do some lentil experiments soon; winter is coming. I'm going to
Chicago tomorrow with friends; we will probably spend a lot of time
hanging out in a suburban hotel and going out to eat. This will be a
test of my fortitute and my ability to demand restaurants where I can
get something to eat.

Red lentils and yellow split lentils are off my menu, but I can eat a good
serving of whole Puy lentils - which I prefer anyhow!

Uncle, I'm afraid I don't know. I suspect not - but I think they might be
lower GI carbs, because the blackness is from a skin; they keep their shape
nicely when cooked.
I can buy them just in the dried pulse section of my local supermarket,
which also does them canned; I'd expect a health-food type shop to stock
them for sure. Whole green lentils might be worth trying as a substitute.
