Two questions.

1) Does anybody here have a good recipe or two for bread that is low
carb and sugar free? Or can you tell me a good site to go to that has
such recipes?

2) what is the difference between T1 and T2?

click on on-line version, then biscuits,breads, and cakes. You might get
some ideas or recipes you like. I'll let someone else tell the
difference between type 1 and type 2 in a more precise fashion than I
could.

I don't.  But I am wondering why you would want a sugar free bread?  Sugar
or some form of sweetener is what helps to activate the yeast.  And you
really only need about a teaspoon per loaf.  Not a big deal in terms of
carbs.

Type 1 is thought to be caused by a virus.  People with type 1 no longer
produce any insulin of their own and must take insulin.  Type 2 is more
complicated. People with Type 2 either produce enough or more than enough
insulin, but their bodies can't use it properly.  Or in some cases, they
produce some insulin but not quite enough.  And there is usually insulin
resistance.

Google is your friend. Go to http://www.google.com and search for "low
carb recipes." You'll find more low carb recipes than you could ever
possibly cook in a single lifetime!

I love to bake bread.  I've started to add whole wheat gluten to mine.  It
cuts the carbs down some.  Bob's Red Mill also makes a LC flour that I might
try to copy.

What kind of bread do you like? I have 3 favourite recipes; a dense texture
flaxseed bread, a lovely but crumbly walnut bread, and an easy bread machine
recipe.

Asking the easy ones first? : )

T1 is an autoimmune disease - the body attacks and kills the pancreas,
leaving the victim with no means of producing their own insulin.

T2 is characterised by high insulin resistance. This can be associated with
obesity, which worsens insulin resistance. The body produces shed-loads of
insulin to overcome the resistance, which burns out the pancreas.
Eventually, a T2 may need to inject insulin.

There are several other variants, including unfortunates who start T1 then
develop insulin resistance, or T2s who develop T1, or late onset T1s who
look like T2s for years - and some really rare genetic oddities that look
like either T1 or T2 but aren't.
