I'm looking for something that will seal a tooth - not only on the
surface, but as far down towards the root as possible - at least on the
sides. I see that sealants are usually used on the top surfaces. Are
they not suitable for the sides - or is there anything that could seal
the sides - and below the gum as well? (Not including things like
sensodyne - I don't want nitrates.)

Sealants are generally unfilled or slightly filled resins. They stay
well in the pits and fissures of the tooth, but will rapidly wear off if
applied to the smooth surfaces.

Unfortunately there's nothing that can be applied to seal the entire
tooth. It would be nice to be able to protect the whole tooth like
that, but sadly nothing is available out there like that other than
perhaps entombing the entire quadrant of teeth with dental acrylic
like how they insert some orthodontic RPE's. As Steve mentioned,
sealants are indicated for the pit and fissure areas of the tooth and
are not generally used for the smooth surfaces.
