My dentist told me yesterday that I need two new crowns. I
had never gone through this before and didn't realize that 2 visits
were required to install the crowns. I have practical reasons
(including expiring insurance at the end of the month) to get my teeth
fixed in one sitting. Thus, it would be very useful for me to know
whether the Cerec 3 methodology is generally reliable and I am
wondering what group members have to say about it. Any help would be
appreciated.

Insurance shouldn't be the issue. Most will allow billing the date of
the impression.
Cerec is a nice restoration. One of the dentists who used to frequent
this ng loved them. However, there is a learning process, and hopefully
your dentist will have been using the machine for some time and knows
the ins and outs.
I have no Cerec machine myself.
