A month ago, I had toothache / gum pain and the dentist took x-rays. He
said there were no cavities and sent me to the dental surgeon for
possible wisdom tooth removal. The dental surgeon said it was not
likely a wisdom tooth issue and referred me to the ENT doctor for
possible nerve related problem. The ENT doctor said it was not a nerve
issue ...
After all the runaround, the pain went away after a few days and it was
apparently a mouth ulcer according to my primary care physician.
But I still need to go back to dentist and confirm that there is no
problem with wisdom tooth.
What % of people in the U.S. have them removed?

A large percentage of the population has insufficient room for the
wisdom teeth to erupt into good position.
But you shouldn't concern yourself with percentages. Your dentist and
oral surgeon should be able to evaluate your wisdom tooth situation and
not leave you in between wondering who is right. If they can't agree on
the status of your wisdom tooth, get another opinion.

At what age does the wisdom tooth stop growing?
I am wondering how it can be an issue after age 40.

The eruption of the tooth can vary widely, depending on its position.
I have been surprised to see it occasionally erupt further after age 40.
It can be an issue if it isn't fully erupted for a variety of
reasons--cysts, tumors. Frequently, and esp. if there is periodontal
disease, a malposed wisdom tooth will lead to the loss of the second
molar directly in front of it, and can increase the chance of decay on
the second molar as well.

Good luck on finding two agreeing dentists.
I hope in the U.S. will be easier.
With a similar problem, I ended up extracting it, in the end I made up
my mind by myself, all dentists were still disagreeing [Italy, here].

I hate to have surgery and would like to avoid it if possible.
I've never had much experience with dentists but this recent experience
was very frustrating.
They could not diagnose the problem and I was in a lot of pain.
It was a waste of time.running around to different doctors and sitting
in waiting rooms while under great pain.
I could have just rested at home.

Noting that I'm no dentist at all, I can only reassure you that if the
wisdom tooth already came out completely, the extraction won't be a big
deal. Mine was very smooth and I didn't even had to take any pain killer
afterwards.
But if it is included or half included, things will be different.
