The side and rear of my last molor are surrounded by gum. Unfortunately, the
gum do not stick to the teeth, so food can get in but it's hard for me to
clean them. Should I have those gum surgically removed? Is there a name for
this condition?

If this is a third molar it is very common. Sometimes if this space
can't be kept adequately clean it can get infected. If this happens
more or less regularly, you are best having the tooth removed. It's a
nasty area to attempt to remove gum tissue, and when it has been tried
the tissue often grows back anyway.

Try floss handles (you can find them at your chemist) or an
interproximal tip on an electric toothbrush.
Gums can be removed but they often return with a vengeance.
