I am going to have my wisdom teeth removed in the next few months. If I have
them out on, let's say a Wednesday or Thursday, typically, would I be able
to return to work the following Monday?

Dave, You have nothing to worry about. I wouldnt be very bashful abou

There is wide variability here. You haven't stated how many teeth are
being extracted at once; whether they are erupted or impacted, etc.
If it's one or two erupted teeth, you are likely to be able to return
to work the next day. If there are 4 deeply horizontal impacted wisdom
teeth being extracted at once, I'd let my boss know it could be a few days.
Asking the surgeon who knows the details will be helpful in this case.

Eh...average would be some slight swelling and some soreness--maybe
take a day off. Soft diet for a few days, since you won't want chewy
stuff on either side.

Generally speaking yes.
It of course depends on how difficult the surgery.
ie. impactions, depth, size, etc...
