I have canker sores in my mouth a lot more often than I don't.  Some
time ago, I was told by my dentist to gargle with salty water after I
brush my teeth to keep my gum inflammation to a minimum.  Doing this
really irritates the sores.  I was wondering if this salt-water
treatment could be causing me to get so many of these things.  Should I
stop doing this?

I have crohn's and sores in the mouth is common.  I get prescribed Nystatin
(swish and swallow it is commonly called) and it takes care of it quickly.
You should find out what is causing the sores though.  UM MOM Susan

Apthous ulcers are cause by a sensitivity to Transitional L-form Bacteria.

I thought at least one cause was viral ( herpes)

No.  Herpes can cause ulcers in the mouth, but the location and
appearance tend to be different.  Herpetic ulcers in the mouth tend to
be small, multiple, and on the roof of the mouth or attached gingivae.
Aphthous ulcers are usually (but not always) solitary, small to large,
and on the movable tissues of the mouth such as the lining of the lips,
alveolar mucosae, cheeks, and floor of mouth.
