dietary oils.......

I find differences in opinion as to the best or the most beneficial
oils to use in the daily diet.  I'm curious as to the mechanics of the
various type oils, such as olive, flax seed, avocado oils..etc.  Does
anyone know the chemical synthesis of those oils in the blood stream
and which combination benefits us the most..??

I don't know much about oils, but Dr. Perricone's new weight loss book
recommends coconut oil. It is saturated, but it is made of medium length
fatty acids that the body burns rapidly, but does not store very well. I've
been taking coconut oil for years to fight inflammation. Russ Farris

Beneficial oils: extra virgin olive oil and extra virgin rape seed oil. Also
fish oils.

Besides being beneficial, extra virgin olive oil is delicious.  There
are many brands and it is fun to sample them.  Many good
Italian restaurants serve a little bowl of some very fruity extra
virgin olive oil to dip the bread in.  The rape seed oil, which I
believe is marketed as canola oil, really doesn't have much
flavor and is used for baking where this is an asset.

Actually rape seed oil has a quite strong nutty flavor when it is cold
pressed. This nutty taste is an asset in baking as well.
