When aspartame is exposed to heat (As in cooking) it breaks down into
metabolites. One of these breakdown products is Diketopiperazine, a toxic
metabolite that is not usually found in our diet.
There isn't enough known to say one way or the other whether it IS harmful,
but it's a risk I'll try to avoid, which is why I use "Splenda" or any other
sweetener that IS made from "sugar" in any dish where it's exposed to heat.
However sweeteners with Aspartame are quite safe to use (As far as I'm
aware) in cold applications. So, carry on sprinkling it on cereal, I.P.

OMG, you folks certainly need to do some more research concerning
Aspartame. Right now, there's a bill up for banning it in New Mexico.
We have been trying to get it banned here for over 15 years and one
day it will happen. There is certainly information about it concerning
the PKU, because it's clearly labled on most drinks or gums or
whatever, that this isn't safe if you have PKU. It isn't safe for
anyone, but especially for those with PKU. The absolute worst thing
you can do, is believe our government about anything, especially
Aspartame. I am living testimony for what it did to me. In fact,
those of you who believe it's safe if not heated, it's even more toxic
over 86 degrees but toxic in any form, and I don't know what your body
temp is, but mine is 98.6. I also use the little packets to kill
ants!

Sue, please cite some references, as even after cutting down my
Aspartame use, I'm constantly looking for proof it's not safe. Key word:
"proof". We've all seen the websites that claim Aspartame (and milk, and
tap water, and carbohydrates, and #2 pencils, and liberals, and
conservatives, etc.) will dissolve our bodies into putrid gelatin and
change the earth's orbit overnight, but what *proof* can you refer us
to? I don't find it very sweet, so when I use it, I use a lot.
But *puhleeze* don't use legislation as proof of anything, because we
all know politicians can't even spell s-i-y-e-e-n-s, and you know New
Mexico's pols are about as bad as it gets this side of Washington, DC,
with the possible exception of Louisiana. (OT side note: Utah's
legislature tried to ban Daylight Savings Time, citing their claim that
cows give less milk on DST.)
The PKU warning has been on Aspartame's label since Dia Uno.

The diet restrictions are severe, and have to be monitored constantly.

As to the formation of dkp in your body, the chemical bonds between the
peptides in aspartame are immediately broken in your digestive system,
ie the thermal breakdown of aspartame is precluded by its digestion.

BTW I use aspartame, I believe it is safer than sacharine, one of the
weakest carcinogens known to man.

Basically aspartame is a protein, the reason it tastes sweet is due to
it being able to fit into the sugar receptor sites on your tongue.
The amount used in diet drinks is in the milligram range.
The amount of protein in your diet is many orders of magnitude larger.
not a problem.
