I'll simplify it for ya ..
People eat meat and crap in the water ..
EVERYONE uses the water ..
Meat eaters iron levels build to such a point they become reservoirs
for pathogens ..
The iron buildup {age related iron accumulation] in their bodies rusts
/ oxidizes destroying .. important .. parts of the .. body .
Including bone , tissue , etc , etc.
Depleting the body of antioxidants / anti-rust-nutrients .. which are
very .. important.
Replacing / treating WITH the above depleted .. nutrients .. regrow

What's important is to understand the mechanism involved; otherwise you
might avoid something that is necessary and that you are not getting
enough of, such as iron. Spiteller gave a good explanation of the role

Apparently nature uses the unique sensitivity of polyunsaturated fatty
acids (PUFAs) versus oxygen to generate chemical signals if the surface
of a cell is influenced by an outside or inside event; for instance the
attack of microorganisms, proliferation, aging or by treatment of
isolated cells with surfactants. It seems that mammalian and plant
cells respond equally to such changes in their structures by
transformation of polyunsaturated fatty acids localized in the
phospholipid layer of the cell wall to lipidhydroperoxides (LOOHs).
These lipid peroxidation (LPO) processes involve all PUFAs, not only
arachidonic acid.Slight physiological changes of the cell wall for
instance by proliferation seem to activate enzymes, e.g.,
phospholipases and lipoxygenases (LOX). When an outside impact (for
instance by attack of microorganisms) exceeds a certain level LOX
commit suicide and liberate iron ions. These start a nonenzymatic LPO.
Enzymatic and nonenzymatic LPO distinguish fundamentally which has not
been recognized in the past. In the enzymatic LPO processes peroxyl
radicals generated as intermediates cannot leave the enzyme complex. In
contrast in a nonenzymatic LPO process peroxyl radicals are not
trapped. They attack nearly any kind of biological molecules, for
instance proteins. Thus only the amount of an outside impact decides if
proliferation, apoptosis, or necrosis is started.Some evidence
indicates that cancer might be the consequence of a low response of
cells to induce apoptotic LPO processes. In contrast to high level of
LPO processes induces diseases combined with inflammation, for instance
rheumatic arthritis. After consumption of food rich in linoleic acid
its LPO products become increased in low density lipoprotein (LDL).
This LDL is able to enter endothelial cells and damage cells from
inside, long before an inflammatory response is detectable.

Interpretive Summary: Both cholesterol and triglycerides are blood risk
factor metabolites associated with heart disease. Therefore, we are
advised to reduce the consumption of nutrients which have the potential
to elevate these risky compounds. One of these undesirable nutrients
are saturated fats. We are recommended to substitute saturated fat with
unsaturated fat because unsaturated fat does not raise blood lipids.
Based on our recent studies we noticed that high levels of dietary iron
have the potential to elevate the concentrations of cholesterol and
triglycerides in blood. We asked whether the consumption of high levels
of iron will overrule the protective effects of unsaturated fat. When
rats were fed diets which contained high levels of iron, they exhibited
high levels of blood triglycerides. When the diets consumed were high
in iron but low in copper they caused an elevation of blood cholesterol
even when the diets contained unsaturated fat. Data clearly show
regardless of the type of dietary fat, levels of dietary iron are
responsible for elevating blood risk metabolites associated with heart
disease. Nutritionists, health and medical professionals should benefit
from these data and should be aware of the undesirable effects of the
consumption of high levels of dietary iron.
Technical Abstract: This study was conducted to determine whether high
dietary iron will negate the protective effect of unsaturated fat
against hyperlipidemia. Forty- eight weanling, male Sprague Dawley rats
were randomly assigned to 8 dietary groups differing in the levels of
copper and iron and type of dietary fat (saturated or unsaturated). The
diets were either deficient (0.6 ug Cu/g) or adequate (6.8 ug Cu/g)
copper and either adequate (53 ug Fe/g) or high (506 ug Fe/g) iron. All
diets contained starch as the sole source of dietary carbohydrate.
Regardless of the type of dietary fat, three copper-deficient rats fed
the high levels of dietary iron died prematurely due to ruptured
hearts. Surviving rats belonging to the copper deficiency and
high-dietary iron regimen developed severe anemia, enlarged hearts and
livers, and exhibited the highest levels of liver iron. These rats also
developed hypercholesterolemia. Triglycerides were elevated by the
consumption of high iron diets. Data show that levels of dietary iron
not the type of dietary fat are potential inducers of
hypertriglyceridemia. Data also show that the combination of high iron
intake and dietary copper deficiency is responsible for elevating blood
cholesterol.

There's an analogy in many plants, like in garlic, when a fungi
attacks a cell wall, the cell leaks out alliin which then come in
contact with alliinase on the outer side of the membrane and allicin
is formed, a strong fungi-killing (and bacteria killing too) agent.
