filo dough, but don't want something i have to cook since i won't be in
my own kitchen. dinner is turkey and trimmings.

My standby is deviled eggs - fairly inexpensive to make. And if you have a
pastry bag, very quick and easy to fill the egg whites with the yolk mixture
(and in a very pretty way, too).

There are also some great spreads or dips in the stores (especially, the
warehouse stores). A tub of a dip/spread and a package of crackers or chips
and you are set - no cooking.

I made an eggplant spread for an office party this week. The recipe was
kind of made up, but based on something I used to eat all the time when
I was in Israel.

Roast an eggplant in a 500 degree oven for c. 1/2 hour. (Pierce the skin
with a knife before roasting, then turn it about every 10 minutes, so it
roasts evenly.)

Scoop eggplant out of the skin and mash. I used a stick blender. While
it's still hot, add as much crushed garlic as you feel comfortable with.
The heat of the eggplant will cook the garlic a bit, and mute the
flavor. I used 5 cloves for one eggplant.

Chop about half a cup of cilantro or parsley, and mix in to the eggplant
once it's cooled down some. Add about 1/2 tsp. salt, and a small glug of
olive oil.

Chill and enjoy.

If you decide to make cheese and crackers then take a blob of cream cheese,
cover it with chutney and serve with thin slices of baquettes - always goes
over well and people think it is impressive.  I do have a hot crab dip
recipe but it does need to be heated.

For the wedding we took phyllo pastry, stacked 4 pieces together and
buttered the top of each piece.  cut them into squares (scissors or knive)
and put them into tart pans.  Cooked them and then piped in smoked salmon
and cream cheese mixture (could be anything).  Served cold they are
excellent.  You can make the phyllo pastry cups up early - anytime up to a
week or so.  We used the tiny tart pans.

We also threaded tiny skewers with marinated mushrooms and mini bocconini
wrapped with sundried tomatoes into kabobs.  They were excellent.

Off to doctors.

Pinwheels

My sister in law's:

Pinwheels

1 pack Ranch dressing mix
2 pack  cream cheese
2 scallions chopped
2 red peppers  (the skinned ones in a jar)  cut in small pieces
4 oz mild canned chopped green chili
4 large wheat tortilla

Mix the vegetables with the Ranch mix and the cream cheese,  divide between
the tortilla, spread in on them and roll up. Let set wrapped in plastic foil
over night if possible. Slice in to about an inch thick slices.

Norwegian pinwheels.

10 oz sliced smoked salmon (lox)
1 pack "Snøfrisk" Norwegian cream cheese made with part goat milk. (I've
seen it in the stores in PA)
some springs of fresh dill.

Cover a cutting board with plastic foil.  Cover the foil with the salmon,
letting the pieces overlap slightly. Whip the cream cheese until smooth and
spread on top of salmon.  Put the fine parts of the dill spread out on top
(not stalks).  Roll up with the help of the foil, chill for a few hours and
cut in 1/2 inch slices.

Our latest favorite my daughter brought to Thanksgiving.  She tool strips of
jalapeno pepper  and slices of salami.  Put a bit of cream cheese on the
salami added the pepper strip and rolled up.

Now I understand we also had some quite good wine, but these were good and
kind of fried my taste buds, so I'm not entirely sure.

We usually do things like:

the pinwheels that Aina mentioned,

some meatballs in a small crockpot w/bbq sauce or chili sauce, a bit of
grape jellyor apricot jelly, and a splash of wine,

or we do the miniture smoked sausages in bbq sauce in the crockpot,

we often do a hot cheese dip or some other kind of hot dip in a small
crockpot,

we do different kinds of nuts and/or chex mix,

fruit pizza's or veggie pizza's always are a hit as well.

stuffed mushroom caps are another favorite,

as are layered dips like mexican dip with cream cheese, refried beans,
lettuce, tomato, olives, ect. with veggies, breads, crackers, etc to use
for dipping.

My sister makes a dip with cream cheese, a can of crab meat, and
cocktail sauce---she just takes the cream cheese puts it on a plate,
then dumps the can of chunky crab meat on it and covers it all with the
cocktail sauce.   Sometimes she'll mix the crab meat into the softened
cream cheese and then dump the cocktail sauce over it, but most of the
time she just dumps the crabmeat over the cream cheese and then dumps
the cocktail sauce over all of it.    Yum!

spinach/artichoke dip which often we heat at home and then just throw
aluminum foil over it to keep it warm while traveling to who evers house
is another thing we do.

I'm always grateful when somebody brings a simple veggie or fruit tray
to an event.  Given all the goodies everywhere during the holiday
season, I like it when I can find healthier snacks.  Not a killjoy--
just on a sugar and fat overload at the moment.

This is a favorite around these parts:

Surprise Spread
8 oz. cream cheese
½ cup sour cream
¼ cup mayonnaise
1 (3-4 oz.) can of broken shrimp,
rinsed and drained
1 cup seafood cocktail sauce
2 cups shredded mozzarella cheese
1 green pepper, diced
3 green onions
1 tomato diced

Mix first three ingredients. Spread over pizza pan.
Scatter shrimp over cheese mixture. Add layers of seafood sauce,
mozzarella cheese, green peppers, onions, and tomatoes.
Cover and chill until ready to serve.

Serve with taco chips.

kelly's easy cream cheese and chutney, along with some cheeses. but
i'll use the others when i have more energy.

diane (boy that surprise spread sounds yummy!)

I take a disposable pizza pan and spread it with cream cheese, about 1/4
inch thick.  Over that spread cocktail sauce, then break up FAKE* crab meat
all over it.  Chill in refrigerator overnight and serve with Ritz crackers.
People always rave about it when I bring it and it's so easy to make.

*No I do not eat crab.  So those of you who attended Donna M's gimpfest back
off. LOL
