I was just taking my little 10lb turkey out of the oven, and I
remembered that when I was a kid, companies used to give their employees
turkeys for Thanksgiving and Christmas.  I remember my father bringing
it home and sometimes it was so big, my Mom would be wondering if it
would fit in the roasting pan. Some how it always did.  I also remember
Mom getting up at 6am to start cooking it, and the bread that was left
out on the dining room table so it would harden and make good stuffing.
No bagged stuffing mixes for Mom. I don't even know if they existed back
then. Everything was homemade from the stuffing to the gravy to the pie
for dessert. And it was much better.

Good for you cooking a turkey for yourself.  Hope you really enjoyed it.  I
have good memories of Thanksgivings past also.  And it was all made at home!

I'm happy to have those memories too Carol.  Mom used to bake her own
biscuits and would get up in the middle of the night to pound them down
and let them raise again.  She never had a recipe so  I am not lucky
enough to be able to make them.  I also remember her renting tables and
chairs to add to our dining room to accomodate around 30 people for
dinner.  This was without all the modern conveniences such as a freezer
and dishwasher ( I was the dishwasher).  Aren't our memories wonderful
to have and cherish?

LOL, I wasn't the dishwasher, I was the dish dryer :))  I never minded
drying them and putting them away. I guess I didn't want "dishpan hands"
:-))))  There were many things my Mom made that there were no recipes
for. I WISH I knew how she always made perfect gravy!

Yes, I did and it came out really good :)  The stuffing was a little on
the wet side, I'll have ot remember to cut down on the liquid next time.
I am going to cut the meat off the bones and freeze some so I'll have
turkey for the next few weeks :)  It's actually much cheaper than buying
turkey breast at the deli, and it tastes better. I also made Mom's
mashed potatoes. She never had a recipe but I watched her so many times
that I have the technique down pat :)))
