could anyone recommend an everyday cookbook for arthritis sufferers

For that matter, has anyone got a non-quack general nutrition theory?

(Please don't suggest juice because the acid will dissolve the bone spurs,
I've already been nearly slapped scoffing at that one.....)

Well, The Joy of Cooking is pretty good.  So are Betty Crocker and Better
Homes and Garden.  And then there is The New Basics Cookbook.

Oh, are you meaning that arthritis sufferers (hate that word.  Pain is a
given.  Suffering is optional)  are so different from the ordinary
population that they need different cookbooks?  And just maybe you are
planning on selling such to us poor benighted souls?

These are the books that the Arthritis Society in Canada has on their
webpage.  They are suggestions for some healthy cooking, easy to prepare
dishes for people with arthritis (tips for preparing etc.) and some books
with dietary interest.  They also give dishes with easy cleanup in the
kitchen.

Remember that diet cannot cure arthritis - but weight loss can help for some
people and some people find some foods trigger pain a bit more than others
(ie:  nightshades, red wine, chocolate (yeah right!).  None of it works for
everyone but good luck.
