Its been a week for me on Phase I.  I've got to work harder on meals at what
resembles proper times.  I did make diet soda Jell-O last night and looking
forward to trying that.

I think last nights dinner was the best so far.  Wild salmon is in season on
the west coast so I bought one and had them fillet it.  I baked the fillets
in a foil pan for about 10 minutes on the top "warming rack" of the outside
grill.  (It was a bit over 400 degrees)  Topped it first with some green
onions, some I can't Believe its Not Butter Spray, salt, pepper, and fresh
dill.  (I'd never have fresh dill on had but one of their recipes called for
it so it was in the refrigerator).  I sprayed the pay with cooking spray
first and added a little water as well.

Our cats never eat people food.  Last night was an exception.  One cat was
begging to be fed bites.  The other stole a chunk from the dog.  And Charlie
loved it so everybody was happy.

Anybody else want to share the best or the easiest meal they've had so far?

I have had the summer squash and zucchini with walnut which was just
yummy. I think that was in the orange recipe book. I will have to try
the 'mashed' cauliflower again as when we discovered the cream was bad,
we substituted Ricotta. It was not so good. But my dance studio owner
says she loves it and her eight year nodded her head - she likes it too.
I think that means it MUST be good if an eight year old ate it.
I have been making myself a hamburger patty and putting about a
tablespoon of crumbled blue cheese on the top. I cook a small onion and
about 10 mushrooms with the burger and I have a salad to go with that.
I think I have decided that I don't like Ricotta cheese. I made one of
those desserts and it was pretty nasty. Back to the Jell-O.
Oh, I discovered that the cans of soda are by Waist Watchers - not
Weight Watchers. It is made by the Adirondack Beverage Company. I was
much amused by the fact that I thought the can said that
www.waist-watchers.com was their site. Turns out that belongs to a some
sort of condom company.  Can't imagine why they choose the name waist
watchers...
But back on topic, my favorite meal has been the Greek Salad I got a
Panera Bread company and I have had it without the roll. lol

Largish size pork cubes sauteed slowly with a sliced onion in some olive oil.
Top it with a scoop of salsa and a sprinkle of low-fat cheddar. Add a lettuce
wedge with a bit of balsamic vinagrette and a bottle of water. Could prolly eat
it every nite ;)

Before you give up on Ricotta, try it with some sweet n low and cinnamon
:))))

I made sugar free jello today with diet soda and it is SO GOOD!!!!! I
may just eat jello from now on, LOL :))))

Isn't it amazing how that soda turns the Jell-O into something yummy.
As to the Ricotta -- I think it is it's texture. I thought it would be
creamy and it is filled with tiny little bumps. Doesn't come close to
cheese cake. lol  Am I doing something wrong?

Shove it in a blender or food processor :))))  That's why God invented
them...to get the lumps out of ricotta cheese and gravy when you screw
it up :)))

As for the jello, I haven't eaten it in years but with the soda, I just
LOVE IT :))))))

I've been making the Jell-O with the soda and with less liquid so it is firm
enough to cut in cubes and eat with your fingers.  12 oz boiling water and
12 oz soda rather than 16oz of each (the big Jell-O package)

Now if I could keep the kids out of it I'd have something.

LOL  The DH would probably say it's a good way to ruin vodka  ;)  But ya
know, you could use flavored vodka..........  though I think Everclear sounds
more interesting!

The BEST jello shots I've ever had were lime jello and Black Cherry
Vodka.

I hardly ever drink alcohol because of my kidney disease, but once or
twice a year, allow myself the privelege.  I had some of these
flavored shots at a barbecue cookoff and got blitzed!! LOL

That cooking team was the most popular that year. :-)

I've attended a few functions where these jello squares have been very
popular.

No, that is the way ricotta is going to be.  I find the ricotta desserts
very good as far a flavor and as far as being filling.  Not wild about the
texture.

I did make the "mashed potatoes" tonight.  They look great and taste good as
long as you actually like cauliflower.  But there is a slight underlying
gritty texture.  Maybe if I had a better food processor.  I wouldn't advise
them at the same meal with the ricotta.

The lore on the low-carb diet group is that you should cook a clove of
garlic with the cauliflower and that reduces the "cabbage" taste. When I
cook it that way, and then reheat, like twice baked potatoes, I've
served them to people who were surprised to find that they were eating
cauliflower and not mashed potatoes.

Those both sound good.  I might have to buy the recipe book, even if I'm not
really doing that diet!  We both like vegetables and are always happy to find
new variations to old themes.
