I've popped in on a few threads about those of you on the diet.  I was
reading Jo Firey's post about not wanting to make a mess after hubby
cleaned the kitchen and I remembered cooking eggs in Cub Scouts on
campouts.

Break eggs into a ziploc FREEZER bag (MUST be freezer bag or it will
melt). Add ham, bacon, mushrooms, onions, etc. if you want an omelet.
Squeeze the air out of the bag and seal. Knead the bag with your hands
to mix ingredients. Drop the bag into a pot of boiling water for a few
minutes until cooked. Instant omelet with no mess and no dishes to
wash.

If you're going camping, you can prepare these ahead of time and label
each bag with each person's name, so each person gets theirs with
their favorite ingredients.  Hope this helps some of you.
